Thank the heavens for quick and easy healthy meal options that can just be popped into the microwave or slid into the oven because these days I just don't have the time. Over the years I rarely cooked to begin with because even when we were dating the hubby has always loved to throw down in the kitchen. I'm the type who worries that the chicken is under cooked and that I'd poison our kids with salmonella contamination so my go to's would be a pasta and veggie dish or a meatloaf {and that's on special occasions, lol}. But ever since he started working the late shift at a fine dining restaurant on the Upper West Side earlier this year, home cooked meals have come far and in between before he leaves in the afternoon. And if it was a day I have to actually head into the office {especially a Monday}, the last thing I want to do when I get home is cook! I'd much rather spend the extra time with my boys on the couch watching a movie.

Once 4:30pm hits you'll usually find me logging off my office computer and headed to the crowded NYC subway where I catch the express train back into Queens to pick up the kids. If I'm lucky my parents were able to help my youngest with his homework and if not, I'm dreading listening to my 6 year old tell me how hungry he is, only to end up with a prepared plate of food in front of him and minutes later whining about how thirsty or tired he is.
The boys know the drill, get freshened up, do whatever homework is left over and then it's dinner. Admittedly I'm usually so darn tired that if dinner hadn't been prepared before we stepped foot through our door then we may do breakfast foods {this is a judge free zone} or I'll crack open the freezer in hopes that we still have something fast to put together that's still nutritious - leave it to the boys and they're warming up honey buns with a glass of milk. This last week I've been battling with Crohn's flare ups so I appreciate the days where my oldest CJ can help out with easy thing's like heating up dinner and popping in a movie for him and his brother. The boys couldn't wait to see Ice Age Collision Course again, of course they brought up that time they met Astrophysicist Neil deGrasse Tyson and the adventurous Scrat.
Like most parents, I have the tendency to end up just nibbling on whatever it is that's been fixed for the kids and with KidFresh I don't have to feel guilty or worry about what I'm eating and if it's going to cause a flare up because their frozen kids meals have Non-GMO ingredients and up to 1/2 a cup of hidden veggies in every meal.
